There are a number of these efforts already underway. Perhaps you can stand of the shoulders of previous 'giants' ;-)
 
Gallaugher has a great book "Information Systems: A Manager’s Guide to Harnessing Technology" [v 1.2 (Aug. 2011) freely available online] with instructor's materials on http://www.gallaugher.com/chapters/
 
Rick Watson <rickwatson at mac.com> coordinated the Global Text Project IS Book which has a number of collaborative books (check e.g. http://globaltext.terry.uga.edu/booklist?cat=Computing)
 
I was faced with the same situation 15 years ago and with a couple of colleagues write our own textbook but the annual upgrading proved too much of a hassle and we released it as an OER (so feel free to use any of the content even though it is 10 years out of date so it will need serious updating). Finally, you can use Wikipedia's "book creation tool" to create a perfectly open content book!
